6 oz fully cooked Italian style chicken sausages
1 (10 oz) package sliced white mushrooms
1 zucchini, halved lengthwise and sliced
1 (15 oz) can red kidney beans, rinsed and drained
1 (15 oz) can diced tomatoes
1 (8 oz) can tomato sauce
¼ cup water
1 tsp garlic and herb seasoning
2 cups lightly packed baby spinach
Spray skillet. Add sausages, mushrooms, and zucchini. Cook, stirring until lightly browned, about 5 minutes. Stir in all remaining ingredients except spinach and bring to a boil. Reduce heat and simmer about 2 minutes. add the spinach, stirring gently until it wilts, about 1 minute longer.

Sausage and Onion Fajitas (4 servings, 5 pts each)
1 tsp canola oil
½ lb Italian style turkey sausages, cut into ½ in slices
1 red bell pepper, cut into strips
1 green bell pepper, strips
1 large red onion, thinly sliced
4 reduced fat flour tortillas, warmed
Heat oil in large nonstick skillet. Add sausage and cook stirring until browned about 5 minutes. Add bell peppers and onion. Cook, stirring until tender about 8 minutes. Spoon sausage mixture evenly onto center of each tortilla and roll up to enclose the filling.
Before rolling up tortilla, top each with ¼ diced avocado and ½ cup shredded romaine lettuce. Points value increases by 2.
