Stove Top Meatloaf

2 pounds of 96% lean ground beef (24 points)
1 package Stove Top Stuffing - I use the Low Sodium Chicken flavor (12 points)
1/2 cup eggbeaters (2 points)
1 cup water

Preheat oven to 350 degrees. Mix all ingredients together and add a bit of ketchup and dijon mustard (optional). Divide into 2 loaves, coat with a thin layer of ketchup or barbeque sauce and bake for 45 minutes or more until meat is no longer pink.

Serves - 8
WW Winning Points - 4.75 per serving (I count it as 5 points to cover the ketchup that I use)

Bisquick Garden Bake - 2 pts!

Makes 6 servings.

1 cup chopped zucchini
1 large tomato, chopped (1 cup)
1 medium onion, chopped (1 cup)
1/3 cup grated parmesan cheese
1/2 cup Bisquick (reduced fat) baking mix
1 cup fat-free (skim) milk
1/2 cup fat-free cholesterol-free egg product (or 2 eggs)
Salt & Pepper to taste

1. Heat oven to 400 degrees. Spray 9" pie plate with fat-free cooking spray. Layer zucchini, tomato, onion and cheese in pie plate.
2. Stir remaining ingredients until blended. Pour over vegetables & cheese.
3. Bake approx 35 minutes or until knife inserted in centre comes out clean.

Cool 1/2 hour before serving.

Crockpot Sour Cream Salsa Chicken

Serves 4 1 serving=4 Points

4 skinless boneless chicken breast halves
1 pkg reduced sodium taco seasoning mix
1 cup salsa
2 TBL cornstarch
1/4 cup light sour cream

Spray crockpot with cooking spray. Add chicken breasts. Sprinkle with seasoning. Top with salsa. Cook on low for 6-8 hours. When ready remove chicken. Mix cornstarch with a small amount of water. Stir into salsa sauce. Stir in sour cream.

26oz jar of any salsa (I use Great Value brand from Walmart)
1 pound extra lean ground turkey, cooked, broken up as for tacos etc
1 cup cooked rice (the following values are for brown rice as that's all that I had)
24 oz carton fat free cottage cheese

Throw it all together in a bowl and stir!
That's it! We like to eat it wrapped in a tortilla or with tortilla chips. It's good hot or cold.

Cola Chicken

4 skinless chicken breast
1 cup ketchup
1 12oz.diet cola

Place chicken in non-stick skillet.

Pour ketchup and cola over it. Bring to a
boil-cover and reduce heat-cook 30-45 mins.
uncover turn heat up and cook until sauce
thickens and adheres to chicken.

White Bean Turkey Chili

Servings: 14 • Serving Size: 1 cup • Old Points: 4 pts • Points+: 5 pts

cooking spray
2 small onions, chopped
5 garlic cloves
2 tsp chili powder, to your taste
1 bay leaf
1/2 tbsp cumin
1/2 tbsp oregano
2 tsp red pepper flakes (to taste)
3 lbs 99% lean ground turkey
4 16 oz cans of cannellini beans, rinsed and drained
2 cups of fat free chicken broth
1/2 cup of fat free sour cream
salt and pepper to taste

Heat a large heavy bottomed pot over medium flame. When hot, spray oil. Add onions, garlic, saute about 5 min. Add meat and cook, breaking it up until white, about 5 minutes. Add salt, chili powder, cumin, oregano, red pepper flakes and cook for 2 minutes. Add beans, broth, cook uncovered about 10 minutes.

Lower heat and cover, simmer about 45 minutes mixing occasionally. Add sour cream and cook 5 more minutes. Adjust seasoning and salt to taste.

Top with chopped red onion, chopped fresh cilantro, light sour cream, jalapeƱos and reduced fat cheddar if desired.

Broiled Salmon with Rosemary - 6 pts

Servings: 4 servings • Time: 10 minutes • Points: 6 ww points

4 (5 oz.) pieces of salmon
olive oil spray
2 tsp fresh lemon juice
2 tsp fresh, chopped rosemary
2 cloves garlic, minced
salt and fresh pepper to taste

Combine lemon juice, rosemary, salt, pepper and garlic. Brush mixture onto fish.

Spray the rack of a broiler pan with olive oil cooking spray and arrange the fish on it. Broil 4" from the heat until fish flakes easily when tested with a fork (approx. 4-6 minutes per 1/2" of thickness. If fish is more than 1" thick, gently turn it halfway through broiling).
